I'm currently obsessed with any recipe that reminds me of Spring at all. Here in Pennsylvania, it does not feel like Spring at all. In fact, it's currently snowing. I'm so tired of this 30-40 degree weather. I'm ready for bright colors, sunshine, warm air and fresh fruit. I'm trying to stay inspired with the dishes I make now that I'm cooking. Over the weekend I decided to make this recipe. It ended up being so delicious and it definetly reminded me of Spring. I know, you can barely see the fish in any of these pictures but I promise it's there!

Sequins

I love clothes with anything bright or shimmery like glitter or sequins. I have had this shirt in my closet for years and I have only worn it one or two times and I decided it would be a fun shirt to mix with some more casual pieces. I also found some sequined pieces I would love to mix up as well. Sorry for ther fuzzy pictures, my Nikon's battery had died so I had to use my regular digital camera.

Mini Lemon Tarts

For my sister's 12th birthday party I wanted to make a dessert. At birthday parties there's always so much cake and ice cream so I was trying to stay away from the idea of cupcakes, brownies or cookies. Then I also realized that there might not be any room left for a different dessert after eating cake and ice cream. So I opted for mini lemon tarts. A fun little treat I could serve during the appetizers. I added cool whip on them after they were done. I probably would've chosen whipped cream instead but cool whip was a good alternative.  I tripled this recipe because I thought I would need more but then I realized that I would've had enough. It makes more than what you would think.

Ingredients: 4 eggs, beaten
2/3 Cup Fresh Squeezed Lemon Juice (add an extra 1/3 cup for a stronger lemon taste)
2 tablesoons sour cream (I recomend only adding 1)
1/2 Cup Confectioners Sugar
6 frozen mini tart shells (I got about 30 super mini shells)
Whipped Cream or Cool Whip (Optional)

Directions:
Heat Oven to 325 Degrees.
Mix eggs, lemon juice, sour cream and sugar.
Spoon mixture into tart shells.
Cook for 15-18 minutes (mine were done after 10 minutes)

As soon as I saw this shirt on sale at JCPenny's I knew I had to get it. Plaid, flanel and STUDS? Umm. Yes please. $1.99? Yes please! Haha. On another note, I had another day of drivers ed and I actually parallel parked in the city, something I never thought I would be able to do. I also drove on the highway with my mother earlier. Something else I thought I would never be able to do. How old were all of you when you learned to drive? I always swore that when I was 16 I would learn to drive right away, now I'm almost 18 and I am just learning. Haha.

Sometimes I get a really bad craving for chocolate.
Sometimes that craving comes in the form of a milkshake or frosty.
Sometimes Derek comes over and takes me to Wendy's because of that craving.
Sometimes it's our 1 year, 11 month anniversary and I can't believe it will be two years in April.
Sometimes we go back to my house and play scrabble and take cheesy pictures.
And sometimes I realize how much I care about Derek and what a wonderful person he is.

Hello everyone! I hope you all had a great weekend filled with wonderful weather. This weekend I went out shopping with two of my best friends, and then we went to Rita's! (Mango gelatis are where it's at). And today I hung out with Derek who spent the first two days of the weekend in Pittsburgh. I was so thankful for the increase in temperature these last few days, but unfortunantly it will be dropping this week back into the 40's. Despite the weather dropping again, I am also thankful that today was the first day of Spring! So many exciting things will be happening this season, my birthday and graduation! Here are a few things currently putting me in a good mood.

The Start of Spring

Today was such a beautiful day! I was in love with the 75 degree weather. My mom and I celebrated with a trip to Red Robin and then starbucks! I didn't know what to expect so I stuck to jeans, flats and a t-shirt but now I wish I would've worn something a little more "Spring-y" for the day. For the start of Spring I love transitioning darker brown colors with light pieces like, floral sundresses.

St. Patrick's Day

In honor of St. Patrick's day I decided to make an Irish dessert a few days ago. I wasn't planning on necessarily making the dessert green but when I stumbled upon THIS recipe I knew I had to make it. I love pistachio flavored anything so i was excited to make this. Ecspecially the pistachio icing. I adapted it from this recipe.


Ingredients:
  • 1 Package of White Cake Mix
  • 2 Small Boxes of Instant Pistachio Pudding Mix
  • 3 eggs
  • 1 Cup Vegetable Oil
  • 1 Cup Ginger Ale
  • 1 Teaspoon Vanilla
  • 1 Cup of Walnuts
  • 1 1/4 Cups of Milk
  • 1 Container of Cool Whip
  • Green sprinkles (if desired)
Directions:
  1. Combine cake mix, 1 of the pudding mix, eggs, oil, ginger ale, vanilla and nuts in a large bowl and beat on medium speed for 2 minutes.
  2. Grease a pan, bake at 350 degrees for 30-35 minutes. Cool for 10 minutes.
  3. Allow the cake to cool immediately.
  4. For the frosting, make pudding as described in box but only use 1 1/4 cups of milk.
  5. Allow the pudding to thicken and then fold in the cool whip.
  6. Frost, decorate and enjoy!
This cake is so fast and easy to make, I hope anyone that tries it enjoys it. I will catch up with all of you this weekend. I've been fighting migraines all week long so I need to get to bed. Luckily, it's supposed to be nice out the next few days. Who else can't wait for the spring weather!?

Florals and Lace

Today it was still chilly out, but a bit warmer than usual. I'm so excited for spring weather but I'm trying to cram as many winter pieces in as I can before spring officially starts. I've had this skirt sitting in my dresser for the whole season. I always have a tough time pairing skirts with other pieces but I finally found an outfit I loved that allowed me to mix up patterns. Tomorrow is St. Patricks Day! Don't forget to wear your green. :)
