St. Patrick's Day

In honor of St. Patrick's day I decided to make an Irish dessert a few days ago. I wasn't planning on necessarily making the dessert green but when I stumbled upon THIS recipe I knew I had to make it. I love pistachio flavored anything so i was excited to make this. Ecspecially the pistachio icing. I adapted it from this recipe.


Ingredients:
  • 1 Package of White Cake Mix
  • 2 Small Boxes of Instant Pistachio Pudding Mix
  • 3 eggs
  • 1 Cup Vegetable Oil
  • 1 Cup Ginger Ale
  • 1 Teaspoon Vanilla
  • 1 Cup of Walnuts
  • 1 1/4 Cups of Milk
  • 1 Container of Cool Whip
  • Green sprinkles (if desired)
Directions:
  1. Combine cake mix, 1 of the pudding mix, eggs, oil, ginger ale, vanilla and nuts in a large bowl and beat on medium speed for 2 minutes.
  2. Grease a pan, bake at 350 degrees for 30-35 minutes. Cool for 10 minutes.
  3. Allow the cake to cool immediately.
  4. For the frosting, make pudding as described in box but only use 1 1/4 cups of milk.
  5. Allow the pudding to thicken and then fold in the cool whip.
  6. Frost, decorate and enjoy!
This cake is so fast and easy to make, I hope anyone that tries it enjoys it. I will catch up with all of you this weekend. I've been fighting migraines all week long so I need to get to bed. Luckily, it's supposed to be nice out the next few days. Who else can't wait for the spring weather!?
