In honor of St. Patrick's day I decided to make an Irish dessert a few days ago. I wasn't planning on necessarily making the dessert green but when I stumbled upon THIS recipe I knew I had to make it. I love pistachio flavored anything so i was excited to make this. Ecspecially the pistachio icing. I adapted it from this recipe.
Ingredients:
- 1 Package of White Cake Mix
- 2 Small Boxes of Instant Pistachio Pudding Mix
- 3 eggs
- 1 Cup Vegetable Oil
- 1 Cup Ginger Ale
- 1 Teaspoon Vanilla
- 1 Cup of Walnuts
- 1 1/4 Cups of Milk
- 1 Container of Cool Whip
- Green sprinkles (if desired)
Directions:
- Combine cake mix, 1 of the pudding mix, eggs, oil, ginger ale, vanilla and nuts in a large bowl and beat on medium speed for 2 minutes.
- Grease a pan, bake at 350 degrees for 30-35 minutes. Cool for 10 minutes.
- Allow the cake to cool immediately.
- For the frosting, make pudding as described in box but only use 1 1/4 cups of milk.
- Allow the pudding to thicken and then fold in the cool whip.
- Frost, decorate and enjoy!
This cake is so fast and easy to make, I hope anyone that tries it enjoys it. I will catch up with all of you this weekend. I've been fighting migraines all week long so I need to get to bed. Luckily, it's supposed to be nice out the next few days. Who else can't wait for the spring weather!?

Pistachio pudding is my favourite!!! :O I am gonna have to try this out! I usually mix the pudding with some vanilla ice cream and throw it in one of those pre-made graham cracker crusts...you got yourself a pistachio ice cream cake in like 4 minutes!
