Mini Lemon Tarts

For my sister's 12th birthday party I wanted to make a dessert. At birthday parties there's always so much cake and ice cream so I was trying to stay away from the idea of cupcakes, brownies or cookies. Then I also realized that there might not be any room left for a different dessert after eating cake and ice cream. So I opted for mini lemon tarts. A fun little treat I could serve during the appetizers. I added cool whip on them after they were done. I probably would've chosen whipped cream instead but cool whip was a good alternative.  I tripled this recipe because I thought I would need more but then I realized that I would've had enough. It makes more than what you would think.

Ingredients: 4 eggs, beaten
2/3 Cup Fresh Squeezed Lemon Juice (add an extra 1/3 cup for a stronger lemon taste)
2 tablesoons sour cream (I recomend only adding 1)
1/2 Cup Confectioners Sugar
6 frozen mini tart shells (I got about 30 super mini shells)
Whipped Cream or Cool Whip (Optional)

Directions:
Heat Oven to 325 Degrees.
Mix eggs, lemon juice, sour cream and sugar.
Spoon mixture into tart shells.
Cook for 15-18 minutes (mine were done after 10 minutes)
